Baby Pancakes!

Good Morning Everyone,

This morning I thought I would share with you all a recipe that I use almost weekly for Kyra's breakfast! 

I call them Baby Pancakes! 


First we gather all our ingredients! 


Pancake batter
2/3 cups of water
cooking spray
syrup
your choice of fruit, blueberries were what I had on hand! 
 a muffin tin

Now it is time to make the Pancakes!

Preheat the oven to 350.

Mix up your batter as per your pancake instructions and fill up each space about 3/4 of the way full. 

Add your fruit. I did half fruit and half plain because blueberries are really messy and I don't always want to have to do a bath right after breakfast! 

Then add syrup to each little pancake, a drizzle is fine, I went a little overboard here! 

Now pop the pancakes in the oven for 12 minutes and then boom! DONE.


This recipe is SUPER SIMPLE and tastes really great. I love that these can be frozen or refrigerated so that they can last the whole week making it a very economical breakfast as well as a quick one!

Confession Day: Beauty, Bugs, and Blisters

Good Morning Everyone,

And you know what that means! Happy Hump Day/ Confession Day!


I confess that I have a problem when it comes to lusting after makeup/ beauty products. Most specifically these things: (In Order: GlamGlow face Mask, Urban Decay Electric Pallet, Fitbit Flex, and Too Faced Melted Lipsticks)

Obviously I cannot buy all of the things because I am a grown up and realize that my money has to go to more important things like food and bills, you know the boring junk. However if I win the lotto....


I confess that there are no less than 5 light bulbs burnt out in my house...

I confess that when I am feeling lazy but still need to vacuum my couch I just put the whole vacuum on the couch and run it across. Yup lazy.

I confess that I totally stole my mom's area rug when she decided that she was going to get new ones. Gotta love Freebies.

I confess that I had a major freak out when I discovered THE BIGGEST BEETLE EVER on my shirt. I had to get my husband involved. I had the creepy crawlies for the rest of the night. ADDITIONAL FREAKOUT- I was walking down to the basement to get the dog out of the kennel and on the stairs was a really big spider. I take my shoe off to squish it and as I do a MILLION baby spiders go EVERYWHERE! I had to have my husband get the vacuum and suck the buggers up. GROSS.

I confess that I cut my three mile walk to two miles yesterday because I was wearing the wrong socks. Hello Blisters!


Okay that is it for me! I gotta get the little one ready so we can make it to Story Time!

Tuesday Write It! Challenge

Good Morning Everyone, 

Today I am doing the second Write It Challenge that I had set for myself this month. I didn't make this one a linkup since last week was a bit of a bust, however if you feel inspired feel free to leave your submission in the comments! 



Today's Challenge was the 6 word memoir.

Basically describe your life, yourself, whatever, in six words. No more, no less. 

I had seen this done in magazines and I always loved just how much story someone could reveal with only six words to work with. It was inspired by the most famous six word story written by Ernest Hemingway who was challenged to write the shortest sad story which you can Google because it always makes me sad and I'm not about being sad this early in the morning! 

I have three submissions today!

Hot Mama Monday- Trying to get my Mojo back

Good Morning Everyone and Welcome! 

Late post this morning because it has been a busy one and also I am not really feeling very well, but I didn't want to miss a Monday Morning with you all! 

Today I am going to talk about my attempts to get my Mojo back. 



Weight loss has always been a real struggle for me. Sometimes I'm up and sometimes I'm down. There is very little rhyme or reason to my really great losses and my really great gains other than general happiness. That isn't to say right now isn't a happy time for me but my stress levels are at an all time high.

My biggest problem is getting discouraged when things don't go well. When I have a bad day, or a bad week it tends to spiral out of control and suddenly it has been weeks since my last good workout and I haven't logged my calorie intake. 

I'm not sure why it always has to be "all or nothing" with me but I am trying to work on it. This week in particular I am going to try and get myself back into the mindset of weight loss and feeling motivated. I know I'm not in my good mindset but almost there at the moment because this morning the following scene happened.

Brownies in the kitchen. 

Me: I could have one of those for breakfast. 

Inner Me: Yeah you could but what about trying to lose weight? Weren't you going to start off right today?

Me:Whatever, I don't care. I just want to feel better.

Inner Me: Yes you do. You do care. You want to look good, you want to feel good. You DO care. 

Me: .....okay. 

So I had my scheduled breakfast and left the brownie alone.

I got to thinking about it however and I thought...Why would the brownie make me feel better? This morning has been pretty stressful. 13 dogs and a baby to care for really pushes my limits and it makes my morning very busy. Kennel to clean, change the towels, walk the dogs, feed the dogs, give the baby a bottle, make the baby breakfast and on mornings where I have forgotten to write my blog ahead of time, I have to get a blog post up. STRESS. 

So I am going to try and not let stress dictate how I eat. That will be step one. 

Step 2 will be that I will work out for 30 minutes every day or else do three miles every day. I'm not a step counter but I saw this on Pinterest the other day and I thought....hey that sounds manageable.

Step 3 is to try and look at as much motivational material as possible. I am trying to really pin things that make me feel more inspired to stick to my plan and that inspire me. 

Have patience.
So those are the goals for this week. I realize that they are not as concrete as my previous ones but I feel like while I am trying to get my Mojo back they are the ones that I really need to focus on.

Throwback Thursday: Guinea Pigs and Pancakes

Good Morning Everyone,

First off let me thank each and every one of you that come here to read my blog. Some comment and that is AWESOME and some don't and that is fine too. I apologize for my little pity party yesterday. I suddenly realized at some point yesterday while reading comments and really thinking about things that I was being selfish and while my readership isn't huge, it is SIGNIFICANT. You are all important to me and each and every comment I get is greeted with a proper fangirl scream. I promise you. 

So again, Thank You to all of you! 



Now back to the task at hand....Throwback Thursday. 

Now I know you all have seen the Throwback Thursday pictures. Fun images of times past but I thought it would be fun to share a memory of times past! Today I will share the story of Guinea Pigs and Pancakes! 

It was finals week of Freshman year and not a one of us was studying. Honestly we had all be studying for the past week and now that there were only two days left in the semester we just didn't have it in us to go through any more notes or quiz anymore flashcards. We were done. 

The dorm room was small and my roommate and I had crammed as much stuff in it as possible but there was the tiny rug in the center of the room that was free of clutter and that was where we gathered, my roommate, her boyfriend at the time who would later become my best friend, Matthew, Robert, my future husband, and myself. Sitting in a circle around the board game and laughing in a way that reveled in our rebellion.  
 
We were going on our fifth round of the game, still laughing and carrying on with all the carefree joy that is 2am procrastination, when it happened. 

Ginny was giving birth. 

Ginny was a guinea pig that I had gotten along with another guinea pig. They were both supposed to be girls. They were not. 

So the game came to a standstill as four "adults" gathered around the cage to watch the miracle of life. After about an hour there were three new little guinea pigs in the world.

FYI guinea pigs are born ready to go. Their eyes are open, they have fur, and they eat solid food. Just a fun fact. 

It was pretty awesome as we all raised our glasses (of soda of course!) to the new mother and toasted her success. It was all pretty hilarious and uplifting until they all started to squeal along with us..(they aren't called "pigs" for nothing!) 

Once the little family had settled down and it was now at the point of "well might as well just stay up" that we decided we were hungry. The only place open? International House of Pancakes. 

Now again we were freshmen. Freshmen have to park in the lot farthest away from campus. Still nothing was going to stop us, we were still too excited from the game, the miracle, the rebellion! So we gathered up and piled into my car and set off in search of pancakes. 

It is an odd assortment of people that gather at the IHOP at 4am on a Thursday morning. You have other rebellious college students (mostly frat guys) ordering omelets and full sides of pancakes. Shift workers looking half asleep downing cup after cup of coffee. The EMO kids with sunny side up eggs or just a side of toast. Our favorite however were the drag queens. A hilarious group still on a rush from the performance the night before, dressed to the nines and toasting one another with orange juice and buttermilk flapjacks. We couldn't help but laugh along with them and admire the intense amount of makeup that still was in place at 4am. 

After breakfast we all felt exhausted and ready to finally call it a night. We parked the car in the lot and started the long trek back to the dorm. That was when it started to rain. It might have been a hard slog back but something about that rain, something about that whole night actually...well it just couldn't have been more perfect. We laughed, spirits renewed, and ran through the rain.


This night is one of my favorite memories because it marks the beginning of some of the best years of our lives. Hope you enjoyed!

Confession Day 7/9

...I confess that lately I have been wanting to run off to another country...partially because I feel the need to travel....partially because I want to run away and not be an adult anymore....
Being an adult is not going to work for me
...I confess that I'm headed for a pit of despair when I think about my car. The air compressor is going out and unless I drive 70mph the air doesn't get cold in my car. Not comfortable for me and the baby. Seriously this is how I feel right now...

...I confess that this has been me for the past two nights....
*clap clap*

...I confess that in one weekend I managed to undo all the progress I had made on the weight loss front. I may never be thin again. I'm not sure I care at the moment....


...I confess that I have given up trying to tame my hair this summer. It is going to be in either a bun or a braid the rest of the season. Going to be rockin' it like Katniss.

...I confess that the only way I will be rocking said braid is if I have my Mum do it. I can't French braid or Dutch Braid....you'd think with all this hair I would be a pro at styling...hah! 
 

... I confess that I am really bummed no one joined my link up.

...I confess I've been thinking of taking the blog down or making it private. I'm confused why some blogs are SO popular and have SO many followers even after only being up for like...a year. What am I doing wrong?

...I confess that I didn't mean for this to be such a downer post and the gif above was an attempt to cheer myself up.

...I confess if I could sew I would spend the rest of the month locked up and creating Cosplay costumes. I blame Heroes of Cosplay for this. Also the fact that I am not in fact a real adult.


...I confess I will be spending my evening watching The Walking Dead over again, reading all the confession blogs and drinking a glass of wine, except it probably won't be wine and will most likely just be water because of this....
