This is not the first time this has happened to me.
Every time I read cozy books that involve bakeries or food I am suddenly in my kitchen measuring out flour, butter, and sugar. I simply cannot help myself.
TV and movies do this too....for example I have been watching a lot of British TV lately and I now find myself craving high tea type moments. I want lovely cuppa with a biscuit.....What is that? I'm not British. However they make it sound so lovely I just want to join in...
It always happens. I am so susceptible to suggestion. Does anyone else suffer from this?
In any case...Here's the muffin recipe I found via Little Sweet Baker. They taste lovely.
Bakery Style Blueberry Streusel Muffins
- 2 & ½ cups (310g) all-purpose flour
- 1 tbsp (13g) baking powder
- 1 tsp (5g) baking soda
- ½ tsp (2g) salt
- ½ cup (114g) unsalted butter, melted and cooled
- 1 cup (200g) sugar
- 2 large eggs
- 1 cup (250ml) milk (any kind, whole or buttermilk is best)
- 1 tbsp (15ml) vanilla extract
- 1 & ½ cups (230g) blueberries
- For the streusel topping
- ¼ cup (50g) sugar
- 1 tbsp (8g) all-purpose flour
- 2 tsp (10ml) unsalted butter, melted
- ⅛ tsp ground cinnamon
Instructions
- Preheat oven to 425F and spray or line a 12 cup muffin baking pan. Prepare the streusel topping by mixing all the ingredients together in a small bowl.
- In a large bowl, whisk the flour, baking powder, baking soda and salt together. Set aside.
- In a medium bowl, whisk the melted butter with the sugar, add the eggs, mix, then add the milk and vanilla, mix again.
- Add the wet ingredients to the dry and gently combine using a rubber spatula until moistened. Fold in the blueberries until just incorporated.
- Divide the batter into the 12 muffin cups, top with streusel and bake for 5 minutes at 425F, then keeping the muffins in the oven, reduce the heat to 375F and bake for another 15 minutes or until a toothpick inserted into the center comes out clean.
i'm enjoying a lovely cuppa right now, no biscuit though (very rude). i am the same way when i read books with food, though thankfully i am not much of a cook and i definitely can't bake to save my life haha so bakeries are safe with me. i was reading a book the other day, i don't remember where it was set, but it talked about mediterranean food a lot and i drove to the grocery to get hummus and stuff because it made me so hungry for it haha
ReplyDeletei switched back to tea today but i gotta say, it didn't do much for me in terms of a pick me up! i had to have 2 cups for that to happen :)
ReplyDeleteNow I want some stupid muffins. But I want like half of a big one from somewhere delicious, Panera or something. Although those really shitty ones in the bag, the mini ones that have like 4/5 to a bag, those would do to, but only one bag because they are absolutely horrid for you.
